OBX Chocolatier

OBX Chocolatier are handmade chocolates by Kelly Walker. Her chocolates are made by hand and Kelly can be found swirling chocolate here at Tommy's as well as our sister store, Bagels to Beef Cafe, right in front of you so you can sample handmade chocolates made only with the finest single-origin Venezuelan chocolate. Give us a call and we will share her scheduled appearances with you. Kelly encourages chocolate lovers to 'think outside the chocolate box', as she loves to mix sweet and savory together to create a truly unique experience. Look for flavors like Strawberry-Balsamic Truffle, Ginger-Peanut Caramel and Habannero-Mango Truffle, just to name a few. Every confection of OBX Chocolatier contains natural ingredients, a lot of love, and a healthy portion of AWESOME, but you won't find preservatives or funky stuff (artificial flavors).

Kelly Walker's Story: In the early 1920's her great (great, great) Uncle Al made his living making marshmallows and fruit gummies for the Wunderly's Candy Company in Philadelphia. Her great grandmother, Mabel, carried on the tradition with her smooth vanilla and orange butter creams and rich caramels. Mabel spent some years working as a chocolatier for Wannamaker's Department Store. Eventually, Mabel and her daughter, Mary, set up a shop in the cellar of their Pennsylvania home. They wanted to be able to share tasty treats with family and friends, and give it as gifts. "I'll never forget what it was like as a child to see how those delightful candies were made. To smell bittersweet chocolate in the air, to taste the first piece from the batch. It was a child's dream. When I was 19 years old my grandmother Mary passed her knowledge onto me. Today, I still want to share that magic with my family and friends, and hope you will share it with yours", says Kelly Walker.

Lemon Wasabi Sauce

Our personal favorite and our top selling sauce for salmon, shrimp and crab cakes. We usually end up with more than one jar in the refrigerator since everybody brings it home with their crab cakes just in case we don't have enough to make it through dinner. A bold blend of lemon, wasabi and raspberry vinegar makes this Lemon Wasabi Sauce wonderful. Serve as a traditional dipping sauce for Sushi. It is excellent with crab cakes, smoked salmon and egg rolls. It also makes a marvelou condiment for roast beef or turkey sandwiches. This is a Kosher product and is Gluten free.

Grill Charms

How many times have you cut into your steak and it’s too rare, or too well done, and then you switch with someone at the table? Or you have to use mild barbeque because only a few guests like it hot? Peanut Brittle from Bertie County

Our neighbors across the bridge from the Outer Banks were chosen as the Best Candy award winner in the 2008 Best of Atlanta Competition. My father-in-law, who grew up in Eastern NC has always said Bertie County Peanuts are the best, guess he’s always had a taste for good food. I have to agree, from the first time I tasted their peanuts and especially the Peanut Brittle, I found myself grabbing a jar off the shelf for an afternoon snack at work.

Tommy’s Dry Packed Sea Scallops

Big, Beautiful and absolutely delicious! These giant deep water sea scallops are a rich, meaty treasure. Never treated or soaked no added water or chemicals to increase the water content. Our scallops are the best of the best!

Sea scallops are about 1 1/2 inches in diameter and should be translucent beige, creamy color. Some will be slightly pink. The best quality is "dry" or "dry pack" sea scallops. Because scallops don't live well out of water (as clams or oysters can) they are shucked when caught and kept chilled on board the fishing boat. For years, many scallops have been treated with sodium tripolyphosphate (STP). These chemicals help to retain the natural moisture, but in excess, STP promotes the absorption of water into the scallop. This can increase the weight by as much as 25% and makes for a wet gummy scallop. The STP-treated scallops have a bitter chemical flavor. Look for scallops labeled "chemical free or dry packed”, the only kind you will find at Tommy’s Gourmet Market.
